Jean-Baptiste Senat returned to his family's roots in Trausse-Minervois, at the foot of the Montagne Noire in the Languedoc, in 1996 after studying history and political science in Paris. Farming organically (Ecocert-certified) across 15 hectares of clay-limestone and siliceous garrigue soils, he is regarded as a leading natural winemaker of the Aude. Endemic is a red blend of Cinsault, Grenache and Carignan.
