About the Wine

Eidosela Selección Sobre Lías 2023 is a lees-aged white wine made from 100% Albariño grapes and produced under the D.O. Rías Baixas designation. The grapes are manually harvested with great care into 18 kg boxes and transported quickly to the winery. There, bunches are selected by hand at the sorting table, destemmed, crushed, and gently pressed. The must is fermented in stainless steel tanks at controlled temperatures using a pied de cuve (starter) from the vineyard plot that best expresses the wine’s style. After fermentation, the wine is aged on selected fine lees for six months with regular bâtonnage (lees stirring) to develop richness and structure. It is then separated from the lees, cold stabilized, gently filtered, and bottled. It contains 13% alcohol and is best served between 10–11°C.
