Adora Maris 2024 is a 100% Albariño from the D.O. Rías Baixas, produced in the parish of Arbo in the Condado do Tea area along the right bank of the Miño River. The vineyards cover 60 hectares and are trained in both espalier and parra systems, with a yield of 7 tons per hectare. Grapes are harvested by hand into 20 kg boxes during September 2024. Once at the winery, the fruit undergoes meticulous manual selection, destemming, and temperature homogenization before cold maceration for 6–8 hours. After pneumatic pressing at three levels, the must is clarified in tanks and fermented at 18°C. The wine is then racked to separate it from the lees, cold stabilized at -5°C to precipitate bitartrates, and filtered before bottling. It is bottled after tangential and microbiological filtration. The final wine has an alcohol content of 13%.
