Señorío de Rubiós Albariño is a 100% Albariño wine crafted from hand-harvested grapes selected from the estate’s best vineyards. Grapes are picked at optimal ripeness and brought to the winery, where they are destemmed, cooled, and gently pressed using a pneumatic press. The resulting must is racked and then fermented at 16°C over 15 to 20 days. Post-fermentation, the wine is decanted off the lees and only the finest tanks are selected for bottling. After a minimum of 5 to 6 months of resting, the wine undergoes cold stabilization, filtration, and bottling. It contains 13% alcohol, 5.90 g/L total acidity, 2.6 g/L residual sugar, a pH of 3.45, and is balanced by low volatile acidity (0.50 g/L).
