About the Wine
The wine is made from six indigenous grape varieties—Treixadura, Albariño, Loureira Blanca, Godello, and Torrontés—all hand-harvested from local vineyards. Historically, these grapes were co-planted and co-fermented in small vineyard plots. In contrast, Señorío de Rubiós vinifies each variety separately and blends the finished wines to ensure precision and balance. After destemming and cooling, the grapes are gently pressed pneumatically. The resulting must is racked and fermented at 16°C over 15 to 20 days. After fermentation, the wine is decanted off the lees and undergoes cold stabilization and filtration before bottling. The final wine contains 12.5% alcohol, 5.50 g/L total acidity, and 1.5 g/L residual sugar, with a pH of 3.50. Importer (Momodi).
