About the Wine
Pazo Señorans Colección 2021 is a white wine made from 100% Albariño grapes, sourced from the Salnés Valley in the D.O. Rías Baixas appellation of Spain. The vines are trained in the traditional parra (pergola) system and the grapes are manually harvested in September. The wine undergoes pellicular maceration and controlled fermentation at 16°C in stainless steel vats. It remains on its lees in the vats for a minimum of 5 months and is aged in the bottle for approximately 30 months. It has an alcohol content of 13.5%, a residual sugar level of less than 2 g/L, total acidity of 6.4 g/L, and a pH of 3.2. Importer (European Cellars - Indigo Wines).
