Bodega Vinificate was founded in 2011 by brothers Miguel and Jose Gomez in San Fernando, in Spain's Cadiz province, after years working with local winemaking cooperatives. The project is built on organic and biodynamic farming and additive-free winemaking. This sparkling red is made from 100% Tintilla de Rota, one of the oldest grapes planted in the area, grown on albariza soil in the Pago Balbaina vineyard in Jerez. The grapes are hand-harvested and undergo three days of whole-cluster maceration with spontaneous fermentation and no additives, then rest eight months on the lees before disgorgement under the ancestral method and crown cap. It carries 12% alcohol.
