Profile & Story

El Maestro Sierra was founded in Jerez in 1830 and is among the very few sherry houses run entirely by women, a tradition carried on today by Dr. Carmen Borrego Pla and cellar master Ana Cabestrero. This Fino is made from 100% Palomino grapes; the must is fortified to 15% alcohol to encourage the growth of the velo de flor, a natural layer of yeast that covers the surface of the wine and protects it from oxidation throughout its aging, giving the wine its pale color and distinctive character. The wine undergoes biological aging for about four years in 500-liter American oak butts through the traditional criaderas and soleras system.

Dry, pungent, and delicate on the palate, with the bready, saline character typical of extended aging under flor.
