El Maestro Sierra is a small, single-site Jerez house founded in 1830 and among the very few sherry houses run entirely by women, a tradition carried on today by Maria del Carmen Borrego Pla, continuing the work of her mother Pilar Pla Pechovierto. This Pedro Ximenez is made from 100% sun-dried PX grapes: after asoleo in the summer sun to concentrate their sugars, the must is fortified, clarified, then fortified again to 15% and transferred to American oak butts for around fifteen years of oxidative aging through the criaderas y soleras system.
Tasting Notes
Deep dark brown in color, with a nose of exotic spices and almost red fruit alongside classic caramel overtones. The palate is dense, sweet and silky, with robust dark red fruit, caramel and toasted almonds, balanced by bright acidity that keeps it light on its feet.
