Profile & Story

Garciarevalo farms the Tres Olmos single vineyard at the confluence of the Adaja and Eresma rivers in Rueda, where vines aged 130 to 145 years grow in deep sandy soils within a microclimate up to five degrees cooler than the surrounding area. The Verdejo Lias undergoes spontaneous fermentation with native yeasts in stainless steel and rests six months on its lees with periodic batonnage before bottling.

Tasting Notes

Lighter yellow-green color. A complex nose of ripe white peach, citrus, jasmine and fresh pineapple layered with mineral, toasted and bakery notes. The palate is fleshy and luscious, carrying stony minerality through to a long, mineral-driven finish, closing with the characteristic gentle bitterness of Verdejo.

Pairing Recommendation

Pairs well with bonito or salmon, or delicate cheeses.
