Profile & Story
Pares Balta is a family-owned winery in Penedes with roots dating back to 1790, now farmed organically and biodynamically across its estate vineyards. Cosmic is grown at 600 meters in the Les Valls-Les Torres vineyard within a protected natural park, blending Xarel-lo with Sauvignon Blanc. The grapes are hand-harvested and given a brief, four-hour skin contact before gentle pressing, then fermented for eighteen days in stainless steel at around 16 degrees Celsius. The wine rests on its lees for three months with daily batonnage before bottling.
Tasting Notes
Pale yellow in the glass, with an intense, aromatic nose of flowers and white fruit lifted by citrus and mineral notes. The palate is fresh and smooth, layered with nuance; floral and citrus flavors build through the mid-palate, carried by bright acidity into a long finish.
