Telmo Rodriguez and his partner Pablo Eguzkiza established Molino Real in 1995 to revive Malaga's historic Mountain Wine style, once ranked alongside Tokaji, Sauternes and German Rieslings. The wine comes from old bush-trained Muscat of Alexandria vines on steep, non-terraced slopes of Paleozoic slate between 350 and 1,000 meters near Competa, in the Axarquia region of Malaga. Following the historic asoleo method, the grapes are sun-dried on esparto mats to concentrate their sugars, pressed using a traditional olive-press technique, and fermented slowly at low temperature in oak barrels for around 20 months before bottling.
