Bodega de Forlong, founded by Alejandro Narvaez and Rocio Aspera, farms 11 organic and biodynamic hectares on albariza soil at 'El Olivar de Forlon' in El Puerto de Santa Maria, Cadiz. Le Petit (labeled on the menu as 'Petit Forlong') is a 90% Syrah / 10% Tintilla de Rota blend, entirely hand-harvested with manual cluster selection, cold-macerated (4C, 24-48 hours), then fermented with daily manual punch-downs in clay amphorae (alcoholic and malolactic both in amphora) before six months' aging in French oak. 14.5% ABV.
