Saline was launched in 2011 by Asensio Rekalde and his sons Txarli and Angel to revive txakoli production in Hondarribia. Their winemaker Ana Martin Onzain focuses on white wines and txakolis. The estate farms 17 hectares across nine plots on the foothills of Jaizkibel Mountain, 500m from the coast, on deep rock subsoil with clay-marl topsoil, trained by double-Guyot. This wine is 100% Hondarrabi Zuri, destemmed and soft-pressed, cold-settled, then kept in tank at low temperature to preserve its natural, gentle carbonation before gentle clarification, stabilization and sterile filtration.
