Profile & Story
Cantina Margo is Carlo Tabarrini's small organic and biodynamic estate (founded 2008) in Sant'Enea, Umbria: 5.5 ha of 25-50-year-old vines on clay-limestone-marl at about 300 m. Fiero Bianco is 100% Grechetto given 2-3 days of skin maceration, spontaneously fermented in open vats and aged in stainless steel, unfined and unfiltered (13% ABV).
Tasting Notes
Pale straw yellow; nose of white flowers (orange blossom, jasmine), lemon and citrus zest, white-fleshed fruit and minerals; the palate is fresh and saline with a persistent mineral finish.
Pairing Recommendation
Aged cheeses, cured meats, grilled fish, seafood risotto and grilled vegetables.
