Christophe Lindenlaub, in Dorlisheim (Alsace), sources this cuvée from an organic neighbour's vineyard. A blend of Sylvaner and Pinot Gris on clay/limestone soils from roughly 20-year-old vines, hand-harvested and directly pressed to stainless steel for spontaneous fermentation, aged 9 months and bottled unfined and unfiltered with minimal (10 ppm) added SO2.
