Fausto and Cinzia Cellario are third-generation growers in Carrù, on the southern edge of the Langhe, farming organically and working exclusively with indigenous Piemontese varieties. È Rosso, their ‘vino del popolo’ Barbera, is hand-harvested, spontaneously fermented with roughly ten days of maceration, aged a year in large cement tanks, and bottled unfined and unfiltered with minimal sulfur. (Note: this cuvée is typically bottled NV; the venue's menu lists a 2020 vintage.)
