Profile & Story

Founded in 1830 in Jerez de la Frontera by the master cooper Jose Antonio Sierra, El Maestro Sierra is a family-run bodega that still works largely by hand within the traditional soleras-and-criaderas system. Its Amontillado (Vejez 12 anos) is a dry wine of 100% Palomino: aged first biologically under a veil of flor for roughly six years, then fortified to about 17.5% and aged oxidatively for more than a decade, a double ageing that gradually darkens the wine and builds great complexity.
