Tiāmat is produced by Cordero San Giorgio, an estate in the Oltrepò Pavese in Santa Giuletta, Lombardy. The wine draws on nine separate parcels of Pinot Nero surrounding the winery, planted on clay soils with guyot-trained vines averaging thirty years of age, each parcel hand-harvested and vinified separately through to bottling. Half of the fruit ferments in stainless steel and half in barriques two to three years old, with cold pre-fermentative maceration and daily gentle pump-overs, followed by around nine months of aging and a further nine months in bottle before release.

Pairing Recommendation

A good match for pasta dishes with meat sauces, and equally suited to grilled or roasted red meats.
