Profile & Story

Grotta del Ninfeo is the label under which the Fraccaroli family bottles its Valpolicella wines from vineyards in San Pietro di Lavagno, in the hills above Verona. This Ripasso blends Corvinone and Corvina, Rondinella and Molinara, hand-harvested from vines planted between 1985 and 1994 on calcareous, volcanic soil, trained on Pergola Veronese and Guyot systems. After eight days of fermentation, the wine is racked and rested in steel before being re-passed over Amarone skins for four days the following January, in the traditional Ripasso method, then matures in French oak tonneaux for twelve months and refines a further eight months in bottle, reaching 14% ABV.

Tasting Notes

An intense ruby red, with subtle notes of ripe red fruit and coffee on the nose. Refined and elegant on the palate, with soft, light tannins and a long, persistent finish.

Pairing Recommendation

Pairs well with boiled meats, rabbit, red meat and cheese, best served at 16-18°C.
