Tolaini is a certified organic and carbon-neutral estate in Chianti Classico, farmed by the Tolaini family across the Valdicava and Vallenuova vineyards. Al Passo takes its name from a circular forest on the estate -- "at the passage" -- that shelters an Etruscan tomb more than 2,500 years old, at the highest point of the Vallenuova vineyard. This bottling blends Sangiovese 34%, Merlot 33% and Cabernet Sauvignon 33% grown on silty clay soil rich in limestone, with 20 days of skin contact in temperature-controlled steel tanks followed by 14 months in French oak fermenters and barriques, six of those months on the fine lees.
