Old Sauvignon Blanc vines grown on a rich terroir fo flintstones of Sancerre (precisely in the village of Saint-Satur). This terroir was formed during the Eocene period, 56 million years ago. The name of this cuvée "ES-56" stands for Eocene Flint 56 million years ago.
Tasting Notes
WS review: A radiant white, with a pretty, inviting, fresh profile of quince, apple and spice notes set against oyster shell and green herbs, plus hints of paraffin and green almond. Firmly structured through the long finish, this is chiseled, with mineral precision and mouthwatering acidity. Fresh, long and delicious. Drink now through 2030.
Pairing Recommendation
An excellent companion to lighly spiced meals and fish dishes, such as John Dory roasted with fennel. A well-aged bottle of “ES-56” will be a perfect match with a farm hen in truffle sauce.
