Domaine du Clos des Rocs is a family estate in Loché, in the Mâconnais, run by Olivier Giroux and representing seven generations of winegrowing centered on organic viticulture and terroir expression. Les Mûres comes from a single hectare of seventy-year-old Chardonnay at 260 meters, on east-facing slopes of shallow reddish soil over limestone bedrock only about twenty centimeters down — considered one of the finest sites in the Pouilly-Loché appellation and a likely future Premier Cru. The grapes are hand-harvested and slowly pressed, then aged twelve months entirely in 500-liter barrels of two to eight years of age, with production limited to around 6,000 bottles a year.

Pairing Recommendation

The domaine recommends it with scallops or line-caught sea bass, and other white meats, served at around 14°C.
