Profile & Story

COS was founded in Vittoria, Sicily in 1980 by three friends — Giambattista Cilia, Cirino Strano and Giusto Occhipinti — who were, at the time, among the youngest wine producers in Italy. The estate farms biodynamically along Rudolf Steiner's principles and helped pioneer the use of terracotta amphorae in modern Sicilian winemaking. Ramì is an organically farmed blend of fifty percent Grillo and fifty percent Insolia grown at 230 meters in Fontane and Bastonaca, on reddish, sub-Apennine sand over limestone-rich soil, planted at a density of 5,000 vines per hectare on vines averaging twelve years old. The grapes are harvested in September and undergo spontaneous fermentation with indigenous yeasts on the skins, before aging in concrete tanks and bottle.

Tasting Notes

As a skin-contact blend of Sicily's Grillo and Insolia grapes, Ramì typically shows an amber-gold hue with notes of orchard and citrus fruit, dried herbs and honey, with the light tannic grip and textured palate characteristic of orange winemaking.
