Pereira D'Oliveira has made Madeira in Funchal since the nineteenth century, aging its wines in cellars dating to 1619 and maintaining one of the island's largest libraries of old, cask-matured Madeiras — wines so intense, as the house's American importer puts it, that they show why Madeira was once so prized. This Sercial was matured in cask before bottling as a vintage-dated 1999.

Sercial's high acidity and dry character make it a classic match for consommés and nutty, savory dishes such as chestnut soup, or with hard, crumbly cheeses.
