Profile & Story

Elvio Cogno's estate sits atop Bricco Ravera above Novello in the Langhe, where, since 1994, the winery — now run by Elvio's daughter Nadia and her husband Valter Fissore — has worked to revive Nascetta, Piedmont's only native white grape and one historically found solely in the commune of Novello, documented in local winemaking records back to the nineteenth century. Anas-Cëtta comes from two hectares at 350 meters, planted at a density of 4,000 vines per hectare and trained on vertical Guyot, hand-harvested in late September. The wine is fermented half in stainless steel and half in Slavonian oak, then aged six months across both vessels followed by six months in bottle.

Tasting Notes

Straw yellow with golden highlights, the wine offers complex, lingering aromas of wildflowers and herbs, citrus and a flinty edge, along with notes of acacia honey, grapefruit, sage and rosemary reminiscent of Vermentino; the palate is fresh, saline and well balanced.

Pairing Recommendation

The estate suggests pairing it with vegetable dishes, white meats, raw fish, oysters and creamy cheeses, served at 10-12°C.
