Figli Luigi Oddero farms 35 hectares of Nebbiolo across Barolo and Barbaresco, on an estate whose property was once a seventeenth-century convent — the inspiration for the Convento label. In lesser vintages the family historically sold much of its fruit in bulk while reserving its finest sites for the flagship Barolo Tradizionale; Convento is bottled only in exceptional years, drawn mainly from parcels in La Morra. It is made in the traditional manner: natural fermentation in stainless steel with a twenty-five-day maceration, followed by two years' aging in large Slavonian oak casks, the same process used for the Tradizionale bottling.

Tasting Notes

The wine favors purity of fruit over sheer structure, with a lifted mineral streak and real clarity; there is no trace of oak aromatics or wood tannin, only a perfume that is at once ethereal and savory.
