Bodegas y Vinedos Raul Perez farms heritage field-blend vineyards planted between the 1890s and 1940s around Valtuille de Abajo in Bierzo, organically, on clay, alluvial-stone and sandy soils. Ultreia Saint Jacques is a Mencia-dominant field blend with Bastardo, Garnacha Tintorera, Palomino and Dona Blanca, fermented 50-60% whole-cluster and spontaneous in 13,000-litre open-top oak vats with over 60 days of post-fermentation maceration, then aged in barrel until the next harvest; bottled unfined and unfiltered around 13.5% ABV.
