Profile & Story
Il Colombaio di Santa Chiara is an organic family estate founded in 2002 by the Logi brothers in San Donato, near San Gimignano. Selvabianca is 100% Vernaccia di San Gimignano DOCG, made with full skin-contact maceration and soft pressing, fermented at controlled temperature in cement and stainless steel, and kept on the lees until bottling.
Tasting Notes
Straw-yellow with green hues, a clear perfume of white fruit, apple, lime, lily of the valley and lemon-thyme, and an intense, vibrant, sapid palate with a long, persistent finish.
Pairing Recommendation
Recommended with tartare, carpaccio, pasta dishes, fried food, white meat and roasts.
