Cantine Umberto Bortolotti was founded in 1947 by oenologist Umberto Bortolotti in the heart of Valdobbiadene, in Italy's Veneto region. This Valdobbiadene DOCG Prosecco Superiore Brut is made from 100 percent Glera grown in the Conegliano-Valdobbiadene territory, on deep soils of clay, marly sandstone and Miocene molasse at 225 to 350 meters altitude; grapes are harvested exclusively by hand between September 15 and 30. After a soft pressing, the base wine ferments in stainless steel at around 18 C for about fifteen days, with the secondary fermentation in stainless-steel autoclave for around sixty days at 15 to 17 C, followed by about thirty days of refinement in bottle. Average alcohol is 11.5 percent with 7 g/L residual sugar.
Tasting Notes
Characteristic varietal aromas, especially clean and well-defined in the grape selection dedicated to the Brut, with marked notes of pear.

The house's driest selection and, as the producer notes, the one best suited to accompanying food; serve as an aperitif or throughout the meal.
