Profile & Story

Ovum Wines was founded in Oregon in 2011 by Ksenija and John House, focused on natural, minimal-intervention Riesling, Gewurztraminer, and Muscat. Big Salt is their signature co-fermented white blend -- roughly 50% Riesling, 30% Gewurztraminer, 14% Early Muscat, with a splash of Sauvignon Blanc and other varieties -- sourced from up to ten organically farmed vineyards spanning the Columbia Gorge, Willamette Valley, Elkton, Dundee Hills, and Rogue AVAs. The Muscat and Gewurztraminer see 3-24 hours of skin contact and the Riesling a brief partial skin contact, all co-fermented together with native yeast and minimal SO2 rather than blended after the fact.

Tasting Notes

A saline, marine-influenced white with aromatic lift from the Gewurztraminer and Muscat and bright acidity from the Riesling -- the wine's name nods to its briny character.
