BATGARA (Bodega Sociedad Cooperativa GOIANEA) was founded by restaurateur/viticulturist Jose Cruz Guinea and farmer/viticulturist Jose Maria (Txema) Gotxi, uniting their two approaches to Txakoli and its indigenous varieties. The winery is located at Urtaran 21, Lezama-Amurrio, Araba/Alava, in the Basque Country, within Denominacion de Origen Arabako Txakolina. Uno is a blend of 95% Hondarrabi Zuri and 5% Riesling from parcels in Lezama and Aiara at 340-400m altitude, on clay-limestone and clay-with-sandstone soils, trained on double Guyot with minimal-intervention, reasoned farming. Grapes are 100% hand-harvested in 15kg boxes in the second half of October, with a low-yield (max 60%) vertical press; fermentation is spontaneous with native yeasts in stainless steel, followed by six months aging on lees, vinified separately by parcel and variety.
