Bodega Cerro Chapeu was launched in 1975 by the Carrau family in Cerro Chapeu, Rivera, Uruguay, on the border with Brazil, at about 250 meters above sea level in a continental climate with wide thermal swings. The soils are alluvial, of volcanic origin, forming deep, iron-rich reddish sediments with good drainage. The winery is minimal-intervention, gravity-fed and low energy use, helmed by Pia Carrau. The Folklore line explores alternative vinifications from Cerro Chapeu fruit. This Pet-Nat is a blend of 80% Trebbiano and 20% Malvasia, hand-harvested in 15kg boxes; the two varieties are destemmed and pressed separately, then fermented with indigenous yeast in stainless steel tanks. The blend is assembled before each tank finishes its alcoholic fermentation and bottled by the ancestral method (methode ancestrale) without disgorgement, giving the wine its characteristic light haze from the yeast.
