Maison Remoissenet Pere & Fils is a historic negociant house in Beaune, Burgundy, founded in 1877; since 2005 it has been owned by a group that includes Maison Louis Jadot. The estate works as both a small-batch negociant, sourcing fruit through close relationships with growers up and down the Cote, and as a vine-growing estate in its own right, farming select vineyards in Beaune and Gevrey-Chambertin according to biodynamic principles. Grapes are purchased by quality rather than quantity, sorted on three tables at harvest, and winemaker Claudie Jobard favors a non-interventionist style that lets the fruit speak clearly. This Bourgogne Aligote is a pure Aligote farmed biodynamically by Remoissenet's own team in the Cote de Beaune and raised entirely in stainless steel on fine lees.

Classically served as the base of a Kir with creme de cassis, or alongside goat cheese, oysters, and other light shellfish.
