Profile & Story
Casa Vinicola Gioacchino Garofoli, based at Castelfidardo in the Marche, has been making sparkling wine since the early 1950s. 'Pet Kon' grew out of the wish to try the ancestral method on the Conero using Montepulciano, married to that long bubbles experience. The fruit is 100% Montepulciano from Monte Conero, on medium-textured, limestone-rich soil, at a yield of 80 quintals per hectare. It is made petillant naturel: spontaneous fermentation on the grapes' own yeasts, bottled unfiltered, and left until the residual sugars finish on their own, then aged in bottle.
Tasting Notes
Garofoli describes an intense pink colour, a fruity and floral nose with yeasty notes on the finish, and a fresh palate with a fine perlage and long, pleasant persistence. Best drunk young.
Pairing Recommendation
Garofoli suggests antipasti, gourmet pizza, gourmet burgers, salmon, shellfish, fresh cheeses, first courses and fried dishes, served at 10 C.
