Georges Descombes farms 15.5 hectares across five Beaujolais crus (Morgon, Brouilly, Régnié, Chiroubles, Beaujolais-Villages) from his cellar in the hamlet of Vermont, Villié-Morgon – considered the 'unofficial fifth member' of the Gang of Four alongside Lapierre, Foillard and Thévenet. He took over the family estate in 1988 and has farmed organically, without certification, ever since, using minimal sulfur (a fraction of what certified-organic rules allow) and eliminating manipulation in the cellar wherever possible. The Beaujolais Blanc comes from Chardonnay, vinified in vats and then aged roughly 12 months in barrel.
