Profile & Story

Loïc Roure founded Domaine du Possible in 2003 in the village of Lansac (Fenouillèdes, Côtes du Roussillon), after work with Amnesty International and sommelier training with Thierry Allemand in Cornas. The estate has grown to 10.2 hectares of schist, gneiss, granite and clay-limestone soils, certified organic, worked with minimal intervention – superficial tillage, the region's Tramontane wind used to help manage disease pressure, and very low sulfur (never over 20mg/L for whites) added only at bottling. ‘Cours Toujours’ is a white blend of Macabeu, Carignan Gris and Grenache Blanc from vines averaging 60 years old, pressed and lightly macerated before a year of barrel aging across five parcels; alcohol runs about 11.5%.
