Profile & Story
Chëpìka is the joint project of Finger Lakes winemaker Nathan Kendall and sommelier/author Pascaline Lepeltier, launched with the 2016 vintage to explore the region's native and hybrid grapes. Certified-organic Catawba is grown on a small vineyard near Keuka Lake and made in the ancestral method (petillant naturel) - bottled while primary fermentation is still finishing, with wild yeasts only and total sulfur kept under 10ppm. The minimalist label's seven lines represent the Finger Lakes' main wine-growing lakes.
Tasting Notes
A native-grape pet-nat with a fine, natural mousse; effervescent stone fruit and citrus character typical of Catawba, finishing dry with the bright, high acidity the variety is known for.
