Domaine Christophe Lepage farms just 6.2 acres in the Cote Saint-Jacques, a small, historic vineyard on the northern edge of Burgundy near Joigny, planted to Pinot Noir, Chardonnay, and Pinot Gris across parcels dating to 1975-2005 on clay-and-flint soils over a soft chalk subsoil. Viticulture is sustainable, with treatments adapted to actual disease pressure rather than a fixed spray schedule. For this cuvee, 85% of the fruit is pressed directly and 15% given a 12-hour skin maceration before pressing, followed by a week of temperature-controlled fermentation and ten months of tank aging.
