Profile & Story

Frederic Brouca is a largely self-taught, minimal-intervention winemaker based in Faugeres, in the Languedoc. Alongside his still wines he produces an extremely small amount of red vermouth from Grenache, Carignan, and Terret Blanc, fortified classically with neutral spirits distilled on his own 1933 cognac still. Local botanicals - thyme, rosemary, lavender, rose petals, and Moroccan orange peel - are macerated in along with local honey, and about a fifth of the tiny production is aged outdoors in barrel for a few weeks to pick up oxidative complexity.

Pairing Recommendation

The producer suggests enjoying it on its own, over a single ice cube, rather than in a mixed cocktail.
