Pais from Chile's Secano Interior (Itata Valley) - a light, crushable red in the style of Gamay or young Pinot Noir, drawing on the region's granite soils and old, dry-farmed vines. Vintners in Itata have revived this once-overlooked heritage grape (Spain's Listan Prieto) through low-yield, small-scale farming over the last decade.
