Romain Guiberteau took over his family's vineyards at Saumur in 1996 and converted to organic farming, certified in 2007, since building a reputation for wines of remarkable intensity and complexity; they are tightly allocated and poured in the best restaurants in France. The Saumur Rouge is 100% Cabernet Franc from two hectares across three parcels on the hill of Breze, planted between 1955 and 1957 on silty-sand soils over limestone bedrock. The fruit is sorted in the vineyard and 100% destemmed, fermented with ambient yeast and aged 10-12 months in steel and/or wooden tanks before a light filtration.
