Guy Roulot took his family's small Meursault domaine to stardom, pioneering the separate bottling of individual lieux-dits and making Domaine Roulot a master of the named parcel. After his sudden death in 1982 his son Jean-Marc — then pursuing an acting career in Paris — took over the direction of the estate in 1989, and has fine-tuned a bright, chiselled, thoroughbred style that shows focus and restraint where much of the village tends toward richness and concentration. Farming is certified organic. Auxey-Duresses, the village just above Meursault, gives a Chardonnay in exactly that idiom. Jean-Marc, himself a keen cook, believes the strong mineral backbone and fresh acidity of his wines marry particularly well with food — which is why they are found more often on restaurant lists than in wine shops.
