Julien Prelat is the third generation of his family to tend vines at Celles-sur-Ource, in Champagne's Cote des Bar, and with his wife Karine was the first of the Prelat name to bottle their own wine, starting with the 2010 harvest. His guiding idea is not to blend: one grape, one vineyard, one vintage. The seven hectares across the Aube sit on Kimmeridgian soils — the same fossil-shell limestone found in Chablis — which lend the wines a distinct minerality and salinity. 'Chantemerle' is 100% Pinot Noir, finished Extra Brut.

Ideal as an aperitif, or served with roast poultry or a strong cheese.
