Profile & Story

Sassetti Livio – Pertimali lies on the Montosoli hill north of Montalcino and is run today by Lorenzo Sassetti, Livio's son and the fourth generation of the family. The Brunello di Montalcino DOCG is 100% Sangiovese Grosso, hand-harvested in early October from spur-cordon vines planted at 7,000 vines per hectare on limestone and clay. The bunches are lightly pressed and fermented in stainless steel at a controlled 28-29°C with 10-15 days of maceration, then aged 36 months in 33-hectolitre Slavonian oak casks followed by six months in bottle; 14.5% alcohol.

Tasting Notes

Intense ruby colour, with aromas of ripe red fruit and spice. Elegant and structured, with soft, pleasant tannins and a long, persistent finish.

Bistecca fiorentina of Chianina beef; loin of wild boar cooked in bianco.
