2023 Fiano

About the Wine

After years of wrestling with this white wine, trying to bottle it in the Spring, we decided it really needs a bit more time to blossom. Fiano is our most stubborn wine in the cellar and naturally favors a very long cool fermentation, and it wants to sleep until the air in Paso naturally warms and the native yeast pushes the wine toward completion. We let the wine win and we are all better off for it. This is the white that had the most promise to age as many recent Italian white bottlings are striving to do. I’m hopeful this will be the finest bottling of Fiano we’ve ever produced and will continue to show its stuff and even improve for several years, rewarding those with patience.
