Profile & Story
Ceritas is a small, practicing-organic California producer; the 'Colima' Cabernet Sauvignon is a restaurant-only bottling blended from the Peter Martin Ray, Paratus and Black Ridge vineyards, spanning the Santa Cruz Mountains and Mt. Veeder AVAs at over 1,200 feet elevation on shale and volcanic soils. It is fermented with native yeast in concrete, gently extracted and pressed, and aged 36 months in 40% new French oak. Alcohol is 13%.
