Profile & Story

The César Florido bodega was founded in 1887 in Chipiona and is today maintained by César Florido, a fifth-generation descendant of the founder. It is the oldest bodega in Chipiona and one of only two still operating there outside the local cooperative; although Chipiona technically lies outside the official Zona de Crianza for the Jerez D.O., the house makes some of the most distinctive wines of the area. César Florido's name is synonymous with Moscatel: his wines are the reference point for the classic, balanced sweet wines of the zone, grown on Chipiona's sandy-clay soils, considered among the best Moscatel vineyards in the region. This Moscatel Dorado is made from late-harvested Moscatel grapes off the family's own vineyards; after destemming and pressing, the must undergoes spontaneous fermentation with natural yeast in traditional cement vats, which naturally regulate temperature. Fermentation is stopped before completion by the addition of a neutral grape spirit, retaining a good measure of natural sugar, and the wine is then aged for one year in old barrels under the solera system in the Chipiona bodega, reaching 18% ABV.

Tasting Notes

César Florido's Moscatel Dorado is characterized by notes of orange blossom and jasmine on the nose, with a honeyed, raisiny palate — concentrated wines made from shriveled grapes that can acquire enormous complexity with extended cask ageing.
