Pereira D'Oliveira, the family Madeira house founded in 1820, ages its wines in cask under its long-standing belief that Madeira develops best in wood, bottling only as needed to meet demand. Sercial is the driest of the classic Madeira styles, made from the island's most acid-driven grape and typically given extended cask aging to soften its naturally piercing structure — as with this 1977 bottling from D'Oliveira's cellars.
