Domaine Gavoty is a 110-hectare polycultural family estate in Cabasse, in the northwestern Côtes de Provence, farmed without synthetic chemicals for decades and now certified organic. Roselyn Gavoty, who has run the domaine since 1985 (the family has owned the property since 1806), macerates the fruit for several hours before pressing rather than pressing immediately as many Provence rosés do; the saignée and first-press juice are vinified separately, giving her the flexibility to blend the more succulent saignée with the more angular, architectural press juice to reach her intended texture. The 'Grand Classique' bottling is built primarily from Cinsault (roughly 90%), with small portions of Grenache and Carignan.
